The exhaust manifold nuts should be copper plated carbon steel. The copper plating gives the nut a little more heat resistance. As the manifold studs are also made of heat treated steel, it would not be wise to use a dissimilar metal fastener, especially not something as soft as brass and not even stainless steel. Make sure the nuts are the locking type and do not reuse them if you have to remove them for any reason. As far as anti-seize compound goes, use the copper paste type (eg, Wurth CU800 or CU1400) for this and other exhaust applications.
